Cinnamon is separated into two main categories: Cassia cinnamon and Ceylon cinnamon. While both are harvested in sheets found beneath the bark of trees belonging to the same scientific family, they produce distinctly different products. !


 Cassia cinnamon’s potency is what made it the go-to for home cooks and industrial producers—it has a more intense flavor, so a little bit of that special powder goes a long way.  Roughly 95% of its oil is cinnamaldehyde, which gives cassia a very strong, spicy flavor.


 Ceylon cinnamon on the other hand is less common and has long been prized as a cooking spice. It is quite expensive compared to the more common cassia variety.  Ceylon cinnamon is a high-quality, highly prized spice. Between 50–63% of its oil is cinnamaldehyde, which explains its mild flavor. 


Cinnamon are used for medications, skin and hair products, favor food, etc.

Rice is the most widespread staple food in the world.  In fact, there are more than a whopping 40,000 varieties of rice, and

almost every culture has a national rice dish.


The three (3) types of rice are:

   1. Long Grain Rice - This rice has milled grains that are at least three to four times as long as they are wide. Due to its starch composition, it is separate, light and fluffy when cooked. 

 

For: dry, distinct grains; examples: basmati, jasmine


      2. Medium Grain Rice - When compared to long grain rice, medium grain rice has a shorter, wider kernel. Since the cooked grains are more moist and tender than long grain rice, the rice has a greater tendency to stick together. 


 For: creamy moistness without starchiness; examples: Calrose (a type of japonica rice), risotto rice 

 

     3. Short Grain Rice - Featuring grains that are less than twice as long as they are wide, this rice is short and best for sushi. It has a sticky texture when cooked.


 For: sticky, starchy clumps; examples: Japanese short-grain, bomba, Chinese black rice, short-grain glutinous rice 


Though there are many types of rice, there are also many textures and colors of this product.

 There are two types of lumber: Softwoods and Hardwoods. Softwood lumber comes from conifer trees like pine, fir, spruce, and cedar. These woods get their classification for a reason; they can be easily dented with just your fingernail. Softwood lumber also absorbs and loses moisture much easier than hardwoods, so extra care must be taken to maintain the wood’s stability over a lifetime. 

 Softwood lumber is cheaper because conifer trees grow faster than hardwoods. Consequently, softwood lumber is primarily used in construction, like in framing a house or building a deck. If you’re going to do a home DIY project, you’re likely going to use softwood lumber. 


 Hardwood lumber comes from deciduous trees, which have broad leaves that fall off in the cold months. The most common trees you’ll see hardwood lumber come from are oak, maple, walnut, hickory, and mahogany. As you can gather from the name, most hardwoods are harder than softwoods (with the exception of balsa wood), and they aren’t as easily dented. 

Hardwood trees take a much longer time to grow to maturity, so the lumber they’re turned into is much more expensive than the softwood variety. Consequently, hardwood lumber is typically used in fine woodworking, furniture construction, cabinetry, and flooring.
